Si Ji
Evergreen is one of the estimated 50-100 different tea
bush cultivars planted in tea gardens across the
island of Taiwan. The original cuttings from these tea
bushes were brought to Taiwan from the Wu Yi Shan
oolong tea producing region of Fujian Province, China.
Si Ji Evergreen is a modern, improved cultivar loved
for its easy drinkability and good floral nature. It
is used to make semi-ball rolled style teas that are
reminiscent of the celebrated Tung Ting, but it is
planted in tea gardens in lower elevations that
experience less challenging weather than the tea
gardens located higher up the mountain. This tea is
from the Songboling area, located at the southern end
of the Bagua Mountain Range in Nantou County. This tea
is machine-plucked and smaller in size than Tung Ting.
Western-style steeping:
(Medium to large sized teapot: 20-32 oz)
Use 1 heaping teaspoon (2-3 grams) of tea per each 6oz water
Steep 1-3 infusions at 2-3 minutes each.
Water temperature should be 180˚ - 190˚ F
Asian-style steeping: (small teapots under 10 oz or a gaiwan)
Use 1 heaping Tablespoon (5-6 grams) of tea per each 6oz water
Steep upwards of 6-8 infusions (or more!) at 10 seconds to 1 minute each
Water temperature should be 180˚ - 190˚ F |
