We are thrilled
to have this local, regional interpretation of Pu-erh. Ba Ba Cha ( meaning
a handful bundle ) is an unusual and delicious leafy , strip-style raw
Pu-erh that has been stacked and tied together into small bundles. The
leaf is the ‘Big Leaf’ or Dayeh variety that was plucked in the spring in
the Ba Da mountain area of Xishuangbanna in southern Yunnan Province. The
leaf has been given a traditional solar withering and a quick de-enzyming
in a tea firing pan. The leaves are then gently rolled one by one into a
long strip shape and carefully stacked into small bundles. The bundles are
immediately charcoal fired to prevent oxidation but with enough residual
moisture within the bundle to allow the natural fermentation process to
proceed.
Each Ba Ba Cha bundle is wrapped in tissue paper and packaged in a Chinese
take-out food container for protection.
Infuse many
times with very hot water.
