Fujian
Province is home to many styles of excellent Jasmine
tea. This particular version has become quite the rage
in the West, owing to its fun shape and interesting
look as it unfurls and releases its fine fragrance of
perfect jasmine scenting.
Pearls are, of course, special in China, and they are
no less highly regarded in the teapot or cup. Images
of Fu dogs scampering about chasing Jasmine Pearls
would be fun, but are non-existent; so they are much
better portrayed in the classical way with their
regal, single large pearl in mouth. The combination of
Dragons and Pearls in tea lore brings much goodwill to
the serving table and suggests strength and
benevolence for the imbiber.
Steep 2-3 infusions at 3 minutes
each.
Water temperature should be 170˚ - 180˚ F
The Jasmine scenting will dissipate after the first infusion, but the tea
will brew perfectly well again. |
